Today I’m sharing one of my absolutely favourite things and it’s a traditional Bulgarian dish - stuffed peppers. My mom always makes this for me when I go back home in the summer as I don’t make it often enough myself. As some of you know my husband and my two boys are not fans of peppers, but my husband at least loves the stuffing so I do get to spoil myself with these from time to time. The peppers are stuffed with a mix of rice and ground meat, the chopped flesh of an aubergine, carrots and onion. I often use leeks instead of onion as I like that extra bit of sweetness and luxurious taste they add to the rice. In Bulgaria we always use one of our traditional spices - dried chubritsa (or savoury) which is hard to find abroad but you can substitute with oregano. I always stock up on it when I go home as a number of Bulgarian recipes require it. The rice, meat and veg mix is cooked with a bit of water (adding salt and sweet paprika and being a bit generous with the oil) before the peppers are filled with it. You can use this mix to stuff aubergines and courgettes too but personally red pointed peppers are my favourite. Once stuffed, they are arranged in a (large) baking dish with water poured on the bottom. Tomato slices are arranged over the openings so the rice doesn’t dry out. In they go in the oven until the rice is cooked and the peppers are done. They are usually served with a side of cold yoghurt and lots of love in traditional clay dishes.

Spiced red pesto
.
250g sun-dried tomatoes
pinch sea salt
4 tbsp pine nuts
handful parsley
2 garlic cloves
100ml olive oil
1/2 tso chilli powder
1 tsp dried chilli seeds
1 tsp smoked paprika
.
Add all ingredients to a food processor and blend for 2-3 minutes. Store in a clean jar in the fridge or freeze in ice cube trays.

Składniki:
✅500 g mielonego z indyka
✅worek ugotowanego ryżu
✅1 czerwona cebula
✅2 ząbki czosnku
✅2 jaja
✅pęczek koperku
✅około 1l rosołu/bulionu lub wody
Sos (na beszamelu) :
✅1/3 kostki masła
✅4 łyżki mąki
✅pół litra mleka
✅do kontrolowania gęstości sosu - do dolewania rosół lub woda z gotowania pulpetów
✅słoik musztardy sarepskiej ( możecie użyć chrzanu, więc wyjdzie Wam sos chrzanowy :) )
✅sól, pieprz, cząber, curry, czosnek granulowanych
Mięso, ryż, koperek,starta cebulę i czosnek mieszam z jajkami. Doprawiam solą i pieprzem. Formuję duże pulpety i Kładę je do gotoujacego się bulionu.
Na patelni rozpuszczam masło, wsypuję mąkę i próżę. Zalewam mlekiem szybko mieszając. Gdy sos będzie zbyt gęsty, dolewam płynu z gotujących się pulpetów, do momentu uzyskania odpowiedniej konsystencji.
Doprawiam przyprawami z listy i dodaję słoik musztardy. Do sosu Wrzucam pulpety i wszystko gotuję kilka minut. Pyszka!
